Shrimp fried rice.
If you are looking for a pretty simple yet quick recipe, this one's for you! Most of these ingredients are super affordable which is always a plus & great for meal planning for the week. I hope you enjoy making this meal as much as my husband & I did.

INGREDIENTS
1 tbsp. grapeseed oil (or any oil you have to use)
2 cloves garlic, minced
1 Frozen bag of peas & carrots
1 pack of fried rice seasoning
1 lb. shrimp, peeled and deveined
½ salt
Fresh Ground pepper
3 c. cooked jasmine rice
2 tbsp. soy sauce
2 tsp. fish sauce
2 large egg, whisked
2 stalks sliced green onions
Sriracha, sweet & sour sauce for serving
DIRECTIONS
First things first, unthaw the shrimp if frozen in a separate bowl. Then set aside after adding salt & pepper. On medium heat, get your rice started. Make sure you take the time to rinse your rice before placing on the stove .
In a medium skillet over medium heat, heat oil. Add garlic and stir for one minute. Add carrots & peas & sauté, 3 minutes, then add shrimp and cook, 4 minutes, or until pink and opaque, stirring occasionally. Stir in rice and season with soy sauce, fish sauce. Sauté for 2 more minutes. Lastly, add the pack of seasoning to the mix.
Push rice to one side of the skillet and add the egg. Stir egg constantly until almost fully cooked, then fold into rice mixture.
Heat until please. Add soy sauce to the taste as well as Sriracha. Garnish with green onions & enjoy! Super simple.
