Shrimp fried rice.

If you are looking for a pretty simple yet quick recipe, this one's for you! Most of these ingredients are super affordable which is always a plus & great for meal planning for the week. I hope you enjoy making this meal as much as my husband & I did.

Recipe feeds: 4-6 people 

Cook time: 20 mins

Prep time: 20 mins 

INGREDIENTS

1 tbsp. grapeseed oil (or any oil you have to use) 

2 cloves garlic, minced

1 Frozen bag of peas & carrots

1 pack of fried rice seasoning 

1 lb. shrimp, peeled and deveined

½ salt 

Fresh Ground pepper

3 c. cooked jasmine rice

2 tbsp. soy sauce

2 tsp. fish sauce

2  large egg, whisked

2 stalks sliced green onions

Sriracha, sweet & sour sauce  for serving    

DIRECTIONS

  • First things first, unthaw the shrimp if frozen in a separate bowl. Then set aside after adding salt & pepper.  On medium heat, get your rice started. Make sure you take the time to rinse your rice before placing on the stove .

  •  In a medium skillet over medium heat, heat oil. Add garlic and stir for one minute. Add carrots & peas &  sauté, 3 minutes, then add shrimp and cook, 4 minutes, or until pink and opaque, stirring occasionally. Stir in rice and season with soy sauce, fish sauce. Sauté for 2 more minutes. Lastly,  add the pack of seasoning to the mix. 

  • Push rice to one side of the skillet and add the egg. Stir egg constantly until almost fully cooked, then fold into rice mixture.

  • Heat until please.  Add soy sauce to the taste as well as Sriracha. Garnish with  green onions & enjoy! Super simple.
